Why do so many people scrunch their nose when you say beets? Maybe it brings back a childhood vision of beets in a can.
Beets are an awesome sweet root that date back to prehistoric Asia, North Africa and Europe. Originally they were harvested for their leaves or "beet greens'.
They are packed with vitamin C, iron, magnesium and folate. You will also find Betanine in this vegetable which is a powerful antioxidant that can have significant effects on lowering blood pressure.
Color variety ranging from vibrant purple and oranges to sedate yellows make them powerful in protecting against colon and other cancers due to anthocyanins.
Beet juice also contains nitrates that act as aspirin helping to reduce the chance for boost clots and protect blood vessels.
If you buy beets look for organic as this vegetable is frequently genetically modified.
Still not sold? Try slicing them thin, toss in coconut or olive oil, sprinkle with sea salt and roast in a 350 degree oven for 30-45 min. Even husbands and kids will eat them! They are delicious !!
