There are some really great benefits to eating Kale
Kale is low in calories, high in fiber and has zero fat. It is filled with powerful antioxidants and is a great anti-inflammatory. Kale is great for cardiovascular support and is high in Vitamin A, Vitamin C, Vitamin K, iron and calcium. As a detox food, it rocks aiding your liver to get rid of free radicals and toxic waste.
Although it is tough and fibrous there are many ways to prepare kale so kids and husbands will eat up its yummy goodness. Remove the spine and cut it up into small pieces and sauté in olive oil and garlic, add to soup and salads or roast it in the oven. It is best to buy kale that is organic as it is on The Dirty Dozen list.
Kale is also very easy to grow in your home garden. It will grow in the flower bed or in a patio pot with very little water or tending to. If you haven’t, give it a try and see how happy your body will be!
