Pumpkins are a part of the Squash family. Why do I love them?
Color! Color! Color!
They are actually a fruit because they create seeds and they grow on a vine. Unlike other fruits, pumpkins are not very sweet and taste better cooked although, they can be eaten raw. The rich orange skin makes them a powerful antioxidant that contains chemicals that help protect against lung, prostate and colon cancer. They act as an anti-inflammatory sometimes helping to improve asthma and arthritis. They are very high in fiber with complex carbohydrates. This helps them to digest slowly in your body making for a more stable blood sugar. They are a great source of vitamin C and E and provide calcium, iron and magnesium. Pumpkins also have a very long shelf life making them easy to buy and store. Keep them in a cool, dark, airy, frost -free place and they will last up to six months.
The light nutty flavor is ideal in both sweet and savory dishes. The seeds can be dried and roasted in the oven on low heat. They contain all the same goodness as the flesh and will last a very long time if stored properly. The best ways to cook squashes are roasting and baking. This helps to preserve all the nutrient packed goodness you don't want to loose.
Of course, lets not overlook the pure joy pumpkins make us feel when we see them. They are a symbol of fall bringing back many memories of fun, family and friends. They help us create traditions and celebrate not one but 2 holidays. Carving a pumpkin is a childhood milestone where many a great artist has been discovered. OK- I made that up but I've seen some pretty great carved master pieces! Can you imagine a fall without pumpkins? Sometimes joy is found in a simple fruit- grab a pumpkin and celebrate!
